Calcium Acetate (CH3COO)2Ca

Calcium Acetate (E263) is used as a growth inhibitor for certain bacteria. It is used in bread and other baked foods to prevent rope formation and to extend the shelf life. Kemira's Calcium Acetate is available as a white powder or agglomerate. Both versions are chemically identical, and differ only in physical form.
Kemira's Calcium Acetate is an AIB approved and Kosher certified product, and conforms to the U.S. Food Chemical Codex V.

Calcium Propionate (CH3CH2COO)2Ca

Calcium propionate (E282) is an effective inhibitor of growth of certain
moulds and some bacteria. It is widely employed in bread to prevent
mould and extend the regular shelf life of the product. Kemira's Calcium
Propionate is available as a white powder or agglomerate. Both versions
are chemically indentical, and differ only in physical form. In North America,
Calcium Propionate agglomerate is sold under the Probake brand name.
Kemira's Calcium Propionate is an AIB approved, Halal an Kosher certified
product which conforms to the U.S. Food Chemical Codex V.
